Start simple. Fresh flavourful ingredients. Good for you.

It's really pretty simple. Start with fresh ingredients and use your imagination to create simple food that tastes great. I try my best to live by the principle that you are what you eat. It's my responsibility to take care of my body as best i can everyday so I eat clean, whole foods, organic and local whenever possible to ensure optimal nutrition and freshness. Personally, I just love the flavour of vegetables and herbs, they are the best expression of nature. In my recovery, I found that as I made changes to my diet and began eating clean, whole foods that my body responded, suddenly I needed less sleep, I felt more alert and energetic, I experienced skin clarity and I lost weight.

On taking care of herself.

Busy or not, I exercise everyday. Even when I am exhausted, I feel re-energized after a workout and I sleep more soundly. To avoid boredom and feel mentally and physically stimulated, I mix it up with the things that I love and my body craves. Long runs in the forest trails with the dogs, rejuvenating re-energizing hot yoga, I even mix in weight training at the gym. The one constant is my passion for the outdoors and the therapy of my horses. Nothing is more mood enhancing than a freedom ride through the forest communing with nature. The sights and smells and the wind in your hair. We are all cowgirls at heart! And well, for me, that's the closest thing to heaven for now.

On eating well.

I love to eat what is fresh and readily available. Nature provides, it's my challenge to make it interesting and delicious. Based on seasonal availability, I focus on eating local as much as possible and elect for organic options whenever possible for both the environmental and health benefits. Simple meals prepared with fresh wholesome ingredients and inspired by new tastes and combinations are really the backbone of our trial and error method at daizies. Travel and experimentation are huge inspirations when it comes to food and I always approach food now with appreciation for its importance in my health and well being.

On finding passion

You just have to ask yourself what it is you want to do, believe in yourself and get out there and do it with gusto! And sometimes you just have to let go to see what life will reveal. I will be forever grateful to have been blessed to have found true unwavering passion late in life. When I met my husband 2 years ago, I knew that I finally had something worth a lifetime commitment to. He gives me the strength everyday to be a better person and to try my best to make a difference. daizies is just one expression of that.

Vision for the future?

To supply fresh organic produce and pasture grazed livestock from their ranch north of Grafton.

To become known as Cobourg's "feel good" restaurant.
